Iced Tea Gelato, and more Summer Recipes!

The other day I  had an inspiration… We have a mint plant that is growing like crazy, and I adore a little sprig of mint in my Iced Tea in the Summer time.  So a recipe creation was in order… What about gelato, inspired by the flavors of good ol Southern iced tea?  The experiment was quite a success – although next time I think I’ll add a bit of lemon zest to the mix to really capture a perfect iced tea.  Go get the recipe over at Foodwhirl: Southern Mint Iced Tea Gelato. More Summer… Read on...

Make your Own Homemade Pop-Tarts!

Make your Own Homemade Pop-Tarts!
How cool is this! Talk of Tomatoes shows off how she made homemade ‘pop-tart’ look-alikes! What a fun and clever idea. And so much better for you than the store bought ones, I’m sure (at least you should be able to pronounce all the ingredients!)
Janelle Says:
“I made pop-tarts today.” That wasn’t a sentence I thought I would say. I made pop-tarts from scratch! The crust was super easy to make, the longest stretch of ‘work’ was the rolling, measuring and cutting into proper rectangles. But then, the filling was super easy: I just used nutella, jam

How to make “Wedding Cake” Stacked Cookies

Since it’s wedding season, I thought you’d like these fabulous looking (and tasty) cookies!  These cookies, basically iced and stacked sugar cookies, were used as wedding favors for a family wedding, and they were gorgeous.  I originally published this idea in 2008, but here’s a cleaned up version of the tutorial.  Here’s how they’re done. Ingredients/Materials: Cookie Dough:
  • Prepare a large batch of cookie dough according to your favorite recipe.  IMPORTANT: Your cookie dough recipe should not have any leavening in it (ie no baking powder or baking soda), so the cookies bake flat.

Cake Eggs: Cake Filled Eggshells!

I remember making these when I was a kid… What a fun and unusual treat for Easter and/or Spring in general.  I could totally see these for a baby shower brunch at each place setting, maybe topped with an edible flower.  The how-to is below! How to make Cake Eggs: All you need:
Egg shells (Jumbo would yield larger results, but in this case, I thought brown would be pretty.)
Your favorite light in texture cake batter (for these I just used a white cake mix) Using an icepick or other sharp pointy… Read on...

Macadamia-Cranberry topped Sweet Potato Tartlets

My latest party recipe: Sweet Potato Mini-Tarts. I got rave reviews on my sweet potato casserole with cranberry-macadamia topping at Christmas, so I decided to adapt the recipe for use as a mini party dessert / appetizer. Last week I gave you the run down on making the tartlet shells… they were very easy and inexpensive to make, but if you’re pressed for time, you can use any type of pre-made appetizer shells for this recipe.
The same ideas can of course be adapted for other types of mini-pies, but I’ll tell you these were certainly a… Read on...
