How to Make Oatmeal Cookies (a Dabbled re-run)

We’ve had no power all day, due to storms that came through, so today you’re treated to a re-run of a cool post you might have missed! My mom brought us homemade Oatmeal Cookies for Easter, so I though I’d share the recipe with you. They are soooo yummy. –Dot

Instructions and Recipe below the pics:
How To: Make Oatmeal Cookies

Ingredients:
2 Sticks butter, softened.
1 c sugar
1 c brown sugar, packed
1 teaspoon vanilla
2 eggs
2 c all-purpose flour (fluffed with fork or sifted)
1 teas baking soda
1 teas salt
3 cups oatmeal
1 1/2 c raisins (or instead, 1 1/2 c chocolate chips & 2 cups chopped pecans)

Directions:
Preheat oven to 375.
Cream butter, sugars, and vanilla until light and fluffy
Add eggs and beat well.
Combine flour, baking soda, and salt (I like to sift them together)
Add to creamed mixture
Add oatmeal and raisins (We did this in the much loved Kitchen Aid mixer, but if the mixture is too think, stir in by hand.)
Drop onto a slightly greased cookie sheet. (a disher makes this really neat and easy)
Bake at 375 degrees F for 8-10 minutes, until light brown.
Remove from oven, and transfer to cooling racks.
Lick beaters!
Eat warm cookies!

(And if you’re concerned about small children and the joy of licking the beaters vs the tiny risk of salmonella, use pasteurized eggs.)

    You know, I could read any number of other blogs, and if they were out of power all day, their post would be full of complaints. Not you! I don’t know if others picked up on your optimism, but it didn’t go unnoticed here.
    As for the oatmeal cookies, I’m gonna hafta bookmark it. See, Easter was overloaded and now it’s diet time again. Ugh.

    Oh, I love oatmeal cookies. The picklets have been asking me to make cookies and it is my turn to take treats to gymnastics. I will be making these today or better yet will have the picklets make these today! I am glad I am not the only one who substitutes chocolate chips for the raisins tho I have been known to buy chocolate covered raisins to put in oatmeal cookies. Thanks for sharing the recipe.

    I can’t wait to try your recipe!

    I like to use the eggs in the shell that have been pasteurized in warm water. If you do that, you can mix up the dough and eat until your heart’s content!
